Healthy Weight Loss Retreat Waldorf Salad

The Waldorf Salad is now being used at FitFarms weight loss retreat! Let's take a little look on where the waldorf salad came from and why it makes such a good FitFarms retreat salad.
The waldorf salad was created at the Waldorf Astoria hotel in New York as a late supper dish. The original recipe was just apples, celery and mayonnaise. Over the years it has been adapted and there are many variations. FitFarms has created a healthy version with the main difference swapping mayonnaise for full fat yoghurt.
FitFarms Ingredients (serves 2 people)
200 grams of chopped apple (Gala and Honeycrisp are good options)
300 grams of cooked chicken breast diced
1 stick of celery finely chopped
75 grams of red pitted grapes halved
40 grams of walnuts roughly chopped
5ml lemon juice
45 grams full fat greek yoghurt
Pinch of salt and black pepper to taste
FitFarms Preparation Method
- Toast the walnuts in a frying pan for 2 - 3 minutes which allows the sweetness to run from the nut.
- In a bowl mix the full fat yoghurt, lemon juice, salt and pepper.
- Add the walnuts, apple, celery, cooked chicken and red grapes.
- Stir so all the ingredients until they are equally coated.
Chef Tip
Once portioned out put into the fridge for 10 minutes to give the dish a slight cold edge before serving.

It's extremely easy to create as the dressing is just full fat yoghurt. The dish ticks all the healthy boxes with its lean chicken pushing up the protein levels and the slow digesting healthy fats from the walnuts. There is also antioxidants and fibre from the grapes, celery and apple.
